Okay idk if you guys would be interested or not but I’ll post the recipe for the tortillas because I swear to god they were DE-licious. It’s a super simple recipe, plus they’re crispier and fluffier than store-bought tortillas. :)
One recipe produces 8 tortillas so reduce/increase ingredients as necessary. Also I’ll say it here that you have to let the dough sit for an hour, so if you were like me and thought I could make them straight away in time for my growling stomach, then you would be wrong.
Ingredients:
- 300g (10oz) plain flour
- 1 scant tsp salt
- 1/2 tsp baking powder
- 50g (1 3/4oz) lard or white vegetable fat (shortening), chilled and diced plus extra for greasing (but I just used any ol’ cooking spray)
- 150 mL warm water
Method:
- Put the flour, salt, and baking powder into a large bowl. Add the lard.
- Rub the lard in with your hands until the mixture resembles fine crumbs. (Mine didn’t really look like fine crumbs, but so long as the lard isn’t still visibly lumpy it should be cool.)
- Add the warm water. Bring the mixture together to form a rough, soft dough.
- Turn it out onto a lightly floured work surface and knead for a few minutes until smooth.
- Put the dough in a greased bowl and cover with cling film. Rest in a warm place for 1 hour.
- Turn the dough out onto a floured work surface and divide it into 8 equal portions.
- Take one piece and leave the others covered with cling film to prevent them from drying.
- Roll each piece of dough out thinly thinly to a circle about 20cm in diameter.
- Stack the rolled tortillas in a pile. Place a piece of cling film or parchment between each.
- Lightly grease a frying pan and heat it over medium heat. Take a tortilla and fry for about 1 minute.
- Turn it over and continue to fry until both sides are cooked and browned in places.
So just continue that process with the rest of the tortillas and you’re good to go!
